The Harvest:

Each of the following crops is chosen to fit a system, a place in the building, and the resources the building can feed back to it. Tap any crop to see where it grows, how it's grown, and what you can make with it.

Leafy Greens

Butter Lettuce

Cool-season green that likes moderate light and 60–75°F; its optimal daily light integral sits around 17 mol·m⁻²·d⁻¹, low enough that it doesn't need prime sun.

Where in the building:

Interior vertical racks and windowless plant-factory zones; its low light demand and compact head make it the workhorse of stacked indoor grows.

Growing system:

Hydroponic: deep-water culture rafts or NFT channels, started in rockwool plugs and transplanted.

Time to harvest:

Fast. A 5–6 oz head can go from seed to harvest in about 35 days, or ~24 days after transplant under strong light, with cut-and-come-again picking possible even earlier.

Takes in / gives back:

Low water and nutrient draw, and because it never flowers or fruits there's no energy lost to reproduction; spent roots and trim go back to compost.

Soft, buttery leaves for salads, sandwiches, and wraps, with a good hit of vitamins A and K

Growth Feed:

Romaine

Same cool-season, moderate-light envelope as butterhead (60–75°F, DLI in the low-to-mid teens), but noticeably more heat- and bolt-tolerant, so it holds quality when the grow room runs warm.

Where in the building:

Interior vertical racks, though its tall, upright "cos" habit needs a bit more vertical clearance per shelf than a low butterhead rosette.

Growing system:

Hydroponic NFT channels, deep-water culture, or ebb-and-flow, started in rockwool plugs like the other greens.

Time to harvest:

Baby-leaf romaine can be clipped in about three weeks; a full upright head runs roughly four to eight weeks depending on light, and it takes well to cut-and-come-again outer-leaf picking.

Takes in / gives back:

Low water and nutrient draw, no fruiting stage to spend energy on, and roots plus trim return to compost.

Growth Feed:

On the plate

Crisp ribs and a slightly sweet bite; the backbone of a Caesar, sturdy enough for lettuce boats and wraps, and rich in vitamins A, K, C, and folate.
